Number of Servings: 8

Ingredients

    1 13.5 oz can of full-fat canned coconut milk (I use Thai Organic)

    150 grams Lindt Excellence 90% Cocoa Supreme Dark Chocolate Bar (15 squares or 1.5 bars)

    2 tsp. Swerve (or the equivalent of your favorite zero calorie sweetener)

    1 dash Salt

    1/2 tsp Vanilla Extract

    1/2 tbsp Xanthan Gum (I use Bob's Red Mill)

Directions

1. In a medium pot, heat the chocolate and coconut milk over medium heat, stirring until chocolate is melted.

2. Turn heat off and whisk the the remaining ingredients into the mixture with a hand whisk until very smooth.

3. Pour into eight 4 oz ramekins or dessert glasses, cover and refrigerate at least 2 hours before serving.
