Ingredients

3 cups Unbleached Flour
1.5 cups Flax Seed Meal
1.5 cups Oat Bran
2 cups Splenda Brown Sugar Blend
4 tsp Baking Soda
2 tsp Baking Power
4 tsp Cinnamon
3 cups finely shredded carrots
2 finely shredded green apples
2 finely shredde pears
1 cup chopped apricots
1 cup dried pineapple
1 cup chopped brazilian nuts
1 cup pistachio nuts
1 cup flax seeds
4 medium eggs (Use substitute for vegans)
1.5 cup milk (Use soy for vegans)
4 tsp Vanilla
1 cup wheat Germ
Directions
1. Mix dry ingredients in a large bowl
2. In a separate bowl mix wet ingredients
3. Incorporate wet ingredients into dry ingredients and mix unitil blended.
4. Fill up muffin cups (about 4 tbls. or a big serving spoon per muffin)
Place on oven warmed up to 350 F from 15-17 minutes.

Good muffins but a lot of work! So give yourself a few hours to prepare. I couldn't find Brazilian nuts so I used walnuts instead. And I completely forgot about the apricots but it was good anyway. This is a great snack or breakfast item packed with so many good for you things (fiber, omega-3). - 7/22/07
