Introduction

Just a simple stir-fry for a quick meal for 2-3. Just a simple stir-fry for a quick meal for 2-3.
Number of Servings: 3

Ingredients

    176 grams Onions, raw
    15 gram(s) Kirkland Minced California Garlic
    3 Tbsp Extra Virgin Olive Oil, Kirkland (1 tbsp=3tsp)
    150 gram(s) bell pepper ( I mix the colors to make it fun )
    2 tbsp Kikkoman Soy Sauce
    7.5 oz Trader Joe's Organic Sprouted Tofu (That's half the package)
    1 cup pieces Mushrooms, fresh

Directions

Saute the onions and garlic in the oil
Add the peppers
I season with Mrs. Dash at this point
Add Tofu and soy sauce, cook for about 5 minutes. (I use a high heat here because I like for my tofu to be a little crispy)
Turn down the heat again and add the mushrooms.

I serve over quinoa, but you can obviously use rice or noodles... whatever you like, really.
Enjoy!
