    2 cup, chopped Broccoli, cooked
    1 large Egg, fresh, whole, raw
    1/2 cup Duke's Light Mayonnaise
    1 small Hot Onion, raw
    1/2 cup Low Fat Cream of Mushroom Soup
    1 tbsp Butter, salted
    3/4 cup Kraft Finely Shredded Sharp Cheddar Cheese
    4 Saltine Crackers, low salt (Saltines)


I prefer to use Duke's mayonnaise but you can make variations. Also, I have used low-carb bread to make my own croutons and I've used those as the topping instead of saltines.


1. Steam fresh Broccoli - set aside
2. In a bowl, mix egg, mayonnaise and mushroom soup
3. Use a handy chopper to finely chop onion and toss in mixture above.
4. Mix in steamed broccoli
5. Mix in 1/2 cup of the shredded cheddar.
6. Put in a 11 x 7 x 2 rectangular baking dish
7. Sprinkle with remainder of cheese
8. Crush saltines and mix w/butter and sprinkle over cheese
9. Bake at 325 for 30 minutes
