Introduction

This is a fantastic Italian pasta dish. It's a low-cost, healthy, light and easy dinner meal. To make this is quicker than running for fast-food, and a much better choice! Number of Servings: 6

Ingredients

    3-4 cloves Garlic
    4 cups thinly sliced Zucchini
    .5 oz. Broccoli
    1/2 cup Red Onion
    6 jumbo Black Olives, chopped
    8 oz. Linguini
    1 oz. Toasted Bread Crumbs

Directions

Boil a large pot of water, then add pasta. Meanwhile saute garlic in oil for 1 1/2 minutes, or till golden. Add zucchini, broccoli and red onion. Cook on low till soft. Drain pasta when A'dente. Save a few ounces of pasta water adding to pan of vegtables. Add pasta, and olives. Plate it in a serving dish. As a final touch, add toasted bread crumbs over top of dish. Makes six, 1 cup servings.
