I came up with this dish while thinking about what to do with some zucchini I still had. I came up with this dish while thinking about what to do with some zucchini I still had.
Number of Servings: 4


    4 medium zucchini (about 800g, almost 2 pounds)
    1 14.5oz can diced tomatoes, no salt added
    1 tbsp garlic
    3-4 scallions (50g, about 2 oz)
    4 servings couscous (172g total)
    Mrs Dash Original Seasoning, no salt
    Non-stick cooking spray


Cut zucchini into slices, then quarter the slices. Cut scallions into slices.

Prepare couscous according to package directions.

Spray a large non-stick pan with non-stick cooking spray, add the garlic. Sautee garlic, then add zucchini. Stir in scallions. When zucchini are tender, add tomatoes, then couscous. Stir until all ingredients are combined, let everything warm through. Season with seasoning of your choice and to your liking.

To add some meat, brown chicken strips before adding the zucchini or add some cooked, thawed shrimp at the end.

Makes 4 1.5 cup servings.
