Number of Servings: 4


    1.5 lb lean pork, cubed
    3 garlic cloves, minced
    2 medium onions, chopped
    1 (or more) jalapeno or serrano pepper, seeded and chopped
    3 cups, very approximately, tomatillos, roughly chopped
    2 tbsp cilantro stems VERY finely chopped, or 2 tbsp leaves chopped
    peanut oil for frying
    salt to taste
    sugar to taste
    cilantro leaves for garnish


cut pork into bite sized pieces, brown in a hot pan with peanut oil.

add chopped onions and fry until soft, add garlic and cook slightly.

add chopped tomatillo and jalapeno, salt and sugar and cilantro. cilantro stems, finely chopped would be best, but leaves will do, too.

cook until tomatillo is a chunky sauce, adjust seasonings if necessary. Serve warm with more coriander leaves and optional cheese, tortilla chips, tortillas, whatever you like.
