Number of Servings: 12

Ingredients

    1 cup grated zucchini
    1 1/2 cups GF oat flour
    3/4 tsp sea salt
    1/2 tsp baking soda
    1/2 tsp cinnamon
    1/3 cup Truvia baking sugar
    1/2 cup unsweetened applesauce
    1/3 cup canola oil
    1 tsp apple cider vinegar
    1/2 cup mini chocolate chips

Directions

Preheat oven 350 degrees
2.Prepare a muffin tin by spraying with nonstick cooking spray
3.In a large bowl, mix together dry ingredients except chocolate chips
4.In a food processor, mix together zucchini and wet ingredients
5.Add wet ingredients to dry ingredients until combined well
6.Add chocolate chips & mix into batter
7.Add batter to muffin tin
8.Bake 20 minutes or until a toothpick can be slid out of the muffin clean
9.Allow to cool 10 minutes in the muffin tin before removing & enjoying
