Introduction

My sweet 12 yr old daughter has been experimenting in the kitchen with healthy ingredients and barely any sugars. These were pretty good for breakfast. Number of Servings: 12

Ingredients

    2 cup Wheat flour, white, all-purpose, unenriched
    1.5 tsp Baking Powder
    .5 tsp Baking Soda
    1 dash Salt
    3 oz cream cheese, Fit & Active 1/3 less fat
    2 tsp Vanilla Extract
    4 oz Silk, Light Original Soymilk, as of 9-13-14, 1 C
    2 serving Eggland's Best Large Egg
    1.25 cup, unthawed Blueberries, frozen (unsweetened)
    8 tbsp Smart Balance Omega Light Buttery Spread
    4 tbsp Smart Balance Omega Light Buttery Spread
    .25 cup Wheat flour, white, all-purpose, unenriched
    1 tsp Cinnamon, ground
    1 cup Mesclin,Mixed greens, Baby Spring Mix (salad with spinach, etc.)

Directions

--Mix Smart Balance (1/2 C or 8 T) and the cream cheese in a bowl until creamy. Add eggs and vanilla. This is where you would add sugar if using it.
--Add 2 C flour, baking soda and baking powder and salt. Mix. Stir in blueberries and chopped spinach. (She didn't thaw them). Lightly mix in the silk (or milk if you choose), but don't over stir mixture.

--Mix CRUMB TOPPING which is the last 1/4 C flour, cinnamon and 1/2 c Smart balance.

--Spoon into sprayed muffin tins. And top with crumb mixture.

--Bake at 375 for 25 min.

Enjoy....makes 12 muffins.
