Introduction

This is a simple, but delicious & hearty meal. This is a simple, but delicious & hearty meal.
Number of Servings: 8

Ingredients

    4 cups cooked brown rice
    2 cups cooked brown lentils
    1 large avocado
    1/2 cup peanuts
    4 tsp. rice vinegar

Directions

Place cooked rice in a large bowl. Cut in avocado and mash into the rice. Stir in the cooked lentils, peanuts, and rice vinegar. Voila!

Makes 8 1-cup servings.
