Ingredients

    3 cucumbers, peeled, seeded and chopped
    1 scallion, sliced
    1 garlic clove, chopped
    3 tbls fresh mint leaves
    1/2 cup water
    1 cup sour cream, reduced fat
    1 tbl lemon juice
    salt & pepper to taste

Directions

1. Puree cucumbers, scallion, garlic, mint and water until smooth.
2. Add sour cream, lemon juice, salt & pepper and blend to combine.
3. Chill for 3 hours.
