Ingredients

    0.5 cup Black Beans - canned - Kroger
    1 medium Summer Squash
    16 oz Turkey, Ground turkey, 93% lean
    1 cup Spinach, fresh
    1 medium (2-1/2" dia) Onions, raw
    4 clove Garlic
    0.5 cup Rosarita no fat Traditional refried beans (serving 0.5 cup)
    4 tbsp Sour Cream, reduced fat
    2 serving Shearer's Yellow Round Tortilla Chips, 9 chips
    1 cup Colby and Monterey Jack Cheese shredded
    3 medium whole (2-3/5" dia) Red Ripe Tomatoes
    1 fruit without skin and seeds Avocados, Florida

Directions

Brown meat and onions together with a little olive oil (if your pan sticks). Add garlic and squash halfway through cooking the meat. Add tomatoes, spinach, and black beans. Season generously with cumin, chili powder, seasoning salt, and pepper. Simmer for about 5 minutes. Serve with Refried beans, sour cream and avocado over crushed tortilla chips.
