    PAM spray
    1 medium stalk celery, diced
    2 large carrots or 6 baby carrots, diced
    1 cup lentils
    2 cups water
    1 cup low sodium chicken broth
    black pepper, to taste
    1 Tbsp olive oil
    12 oz Mahi Mahi fish fillets (4 3-oz servings)
    3 Tbsp Smucker's sugar free maple syrup


Spray a large skillet with PAM; saute celery and carrots for about 5 minutes. Add lentils, water, chicken broth, marjoram and pepper. Bring to a boil then reduce heat, cover and simmer for 20 to 25 minutes or until lentils are cooked. Preheat oven to 375 degrees. Place fish on a baking dish; drizzle with olive oil and maple syrup. Bake for 5-15 minutes per side (it depends on the thickness of your fish!) or until fish flakes easily when tested with a fork. Arrange lentils on dinner plates, top with fish and pour sauce from the bottom of baking dish over all. Makes 4 3-oz fish servings.
