    14.5 oz box Barilla Penne Plus, prepared according to directions.
    1 1/4 c.shelled (16 oz in shell) frozen edamame, boiled in salted water for 2-3 minutes
    1 1/4 c. carrot, matchsticked, and blanched
    1 large red bell pepper, roasted and sliced
    4 T shredded PArmesan cheese
    3 cloves garlic, finely minced
    5-10 leaves fresh basil, minced (according to taste)
    4-8 sprigs of fresh thyme, remove leaves and discard stems.
    2 T olive oil


COmbine hot pasta, blanched carrots, roasted bell peppers and boiled edamame. Toss with olive oil, herbs and garlic. Salt and pepper to taste. Top with shredded parmesan cheese.
