Ingredients

0.25 cup Parmesan Cheese, grated
0.75 small Egg, fresh, whole, raw
2 serving Wegman's string cheese - 1 stick
0.125 cup Red Mill Finely Ground Almond Meal/Flour (by SHANIA23511)
.75 tbsp Coconut Oil
.125 cup Arrowroot flour
Directions
1) Cut mozzarella sticks in half and freeze.
2) When frozen, prepare egg batter with 1 small egg and 1/8th cup Arrowroot. Season with salt and garlic powder. Will not use all of this.
3) Prepare breading-1/4 c almond meal, 1/4 c parmesan cheese, 1/8th c arrowroot, basil, oregano, thyme, garlic to taste. Will not use all of this either.
4) Coat the frozen cheese sticks in egg, then coat them in the breading, packing the coating on tightly with your fingers.
5) Heat a generous amount of coconut oil in a small pan. Mine absorbed around .5-.75 tbs. Ensure oil is hot and it will not absorb as much.
6) Fry about a minute on each side, until brown and you can just see cheese starting to melt through...Be vigilant, it takes little time to overcook them!
