Ingredients

    25 gram(s) Biona Coconut Oil
    1 medium (2-1/2" dia) Onions, raw, diced
    1 clove Garlic, diced
    75 gram(s) Potato - raw weight, in small cubes
    250 gram Marigold vegan stock
    240 gram(s) Asda Single Cream
    260 grams Spinach, fresh

Tips

Can be frozen if necessary. Will keep in the fridge for about a week. Can add more stock when reheating if too thick.


Directions

Saute onion and garlic in oil for 5-6 minutes. Add potato and cook for 1 minute. Add the stock and cook on medium for 10 minutes until the potato is starting to cook. Add the cream and bring up to a simmer, then add half the spinach. Cover and simmer for 15 minutes. Leave to cool for 5 minutes.
Pour into a blender and the rest of the spinach. Blend until smooth.
To serve, reheat with seasoning (salt, pepper, nutmeg).
