Ingredients

    1/3 cup Brown Rice, long grain
    2 t serving Hummus, Sabra Classic Hummus
    1/4 cup, sliced Zucchini
    1/4 cup (1" pieces) Cauliflower, cooked
    5 small Mushrooms, fresh
    1/4 cup, cubes Butternut Squash
    2.75 oz Tyson boneless, skinless chicken breast
    1 cup, chopped Kale
    3 tbsp Beans, red kidney

Tips

Triple recipe if using in a meal plan for the week. Leftovers keep for 3 days -- do not make a week's worth at once.


Directions

Prepare rice, roast veggies, steam kale, grill chicken. Arrange in a bowl, using hummus as your dressing. Great hot or cold, depending on your mood.
