Ingredients

    2 6 inch corn tortillas
    4 T shredded mozzarella cheese
    1/2 cup sweet potato
    1 handful spinach, fresh
    1/2 cup sliced mushrooms, fresh
    2 tbsp chopped onions
    1 tbsp Extra Virgin Olive Oil

Directions

Coat a non-stick frying pan with cooking spray, and sauté mushrooms and onions over med-high heat for 2-3 minutes. Add sweet potatoes, olive oil, and a small sprinkle of garlic powder and red chile flakes (you can also add cumin and oregano if you'd like). Sauté a few more minutes until everything is a nice golden brown, stirring occasionally. When the veggies are almost done, add the spinach, and continue to cook just until the spinach is wilted.

Set veggies aside, and put the corn tortillas in the pan. Sprinkle half the mozzarella cheese on one side of each shell and heat on medium. Cook until melted and the tortillas are soft. Fill with veggies, avocado (if desired -- it is not included in the calorie count for this recipe), and hot sauce or salsa (optional -- see notes for avo). Enjoy!
