A lower fat, lower calorie carrot cake! A lower fat, lower calorie carrot cake!
Number of Servings: 15


    1 cup Granulated Sugar
    1/4 cup Margarine, melted
    1/4 cup Pineapple Juice
    1 cup drained, crushed Pineapple
    6 Tbl. Raisins
    1/2 cup Applesauce, unsweetened, (remove)
    2 tsp. Vanilla Extract
    3 Eggs
    2 cups Flour
    2 tsp. Cinnamon
    1 tsp. Baking Soda
    1/2 tsp. Salt
    3 cups grated Carrots


Preheat oven to 350 degrees. Grease and flour bottom and sides of a 9 x 13 pan.
Mix sugar, oil, pineapple juice, applesauce, vanilla and eggs with a spoon. Beat 1 minute. Combine dry ingredoients and add to first mixture. Beat 1 minute with spoon. Add carrots, raisins and pineapple. Pour int pan. Bake for 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on coolong rack.
Frost with cream cheese frosting, if desired.
