Ingredients

    16 oz Tyson boneless, skinless chicken breast
    0.5 fruit Pineapple, fresh, cut into large chunks.
    1 cup purchased Chicken Stock, (by GFAMTX)
    4 fruit (2" dia) Limes
    1 tsp (C) Garlic, minced, 1 tsp (by MDHARVILLE)
    1 tbsp Extra Virgin Olive Oil
    0.5 tsp Crushed Red Pepper (by BACORONA)
    0.5 tsp Salt
    0.25 tsp Black Pepper, Ground (by 16HEATHER)
    0.25 cup cilantro (fresh), chopped (by MINDTHEGAP7)

Tips

Coconut rice (made with brown rice) is a nice combination with this dish.


Directions

Soak bamboo skewers in water for 30 minutes or more.

Cut breasts into chunks.
Cut pineapple into large chunks.
Skewer alternately pineapple chunks and breast pieces.

MARINADE:
Zest and juice all four limes into a mixing bowl.
Add remaining 8 ingredients and mix.

Lay skewers in shallow dish and cover with marinade. Set in refrigerator and allow to marinate 30 minutes to two hours.

Grill skewers until chicken is done. Enjoy!
