    4 skinless, boneless chicken breasts
    1 cup whole wheat flour
    1 tsp black pepper
    1 tsp garlic powder
    2 large eggs
    2.5 cups Rice Krispie Cereal


Preheat oven to 350 degrees.

Using kitchen shears, cut chicken breasts into 2 inch cubes. Pat dry.

Mix together flour, pepper, and garlic powder. Dip chicken cubes, one at a time, in flour mixture. Set aside.

Next, beat eggs in a small bowl. Set aside.

Pour Rice Krispie Cereal in a quart or gallon size freezer bag. Crush the cereal using a rolling pin. Set aside.

Dip each floured chicken cube individually, first in egg wash, followed by a short shake in the bag of crushed cereal. Place breaded cubes on a Pam-sprayed cookie sheet, 1/2 inch apart.

Bake for 20-25 minutes, or until breading is browned and chicken is white throughout.

We dipped our nuggets in a honey mustard sauce made of 1/2 cup fat-free sour cream, 2 tbsp yellow mustard, 1 tsp fresh ground black pepper, and 1 tbsp honey.
