A nice way to have your meat and vegetable in the same dish. A nice way to have your meat and vegetable in the same dish.
Number of Servings: 4


    2 large red peppers, cut length ways
    1/2 cup diced onion
    1 lb extra lean ground beef
    1 tsp each chilli powder, garlic powder, sea salt
    1/2 tsp each basil, oregano
    1 tbsp finely chopped parsley
    ground black pepper to taste


Cut the peppers in half length ways leaving the top intact. Remove the seeds and membrane. Mix the ground beef and spices. Add finely diced onion. Separate into 4 equal amounts and fill the peppers with the meat mixture. Place in a 8x8 baking dish lightly sprayed with a cooking spray. Cover with tin foil and bake at 375 degrees Farenheit for 40 minutes or until meat is fully cooked.
