    2 small onions, chopped
    4 leaves spinach, chopped
    2 carrots, grated
    1 tablespoon extra virgin olive oil
    1 cup boiling water
    1 cup rolled oats
    salt and pepper if desired
    Egg replacer equivalent to 1 egg


Heat oil in saucepan and add all vegetables. Cook until browned, then add in boiling water. Stir in oats. Add more water if needed.

Cook for 10-15 minutes. Sprinkle with salt and pepper if desired.

Form into patties by hand and soak in egg replacer.

Cook in frying pan until golden brown.

Makes 4 cakes.
