A low fat high fiber way to use up some beets! A low fat high fiber way to use up some beets!
Number of Servings: 12


    * Flour, whole grain, 2 cup
    * Beets, fresh, 3 beet (2" dia)
    * Butter, unsalted, 4 tbsp
    * Honey, .25 cup
    * Vanilla Extract, 1 tsp
    * Egg, fresh, 1 large
    * Brown Sugar, .5 cup, packed
    * Baking Powder, 2 tsp
    * Orange Juice, .75 cup
    * Ginger Root, 4 tsp


Preheat the oven to 350 and grease a 10 inch Pyrex pie pan. You could also do this recipe as cupcakes or in a loaf pan.

Grate the beets using a box grater or food processor. Once they are grated, mix with honey, orange juice, vanilla extract and ginger (ginger should be minced finely or grated using a small grater) and let sit. In a separate bowl, mix the flour, baking powder and sugar. finely chop or grate the butter into the dry ingredients and mix until the butter pieces are no larger than a pea. Beat the egg into the wet ingredients and stir the wet ingredients into the dry ingredients. Don't mix too much or the gluten in the flour will make the cake tough. Pour into your greased pan and cook for an hour, or until a toothpick inserted into the center comes out clean. Enjoy!

Note: Substitute margarine for butter if you don't want to use butter. Substituting soy flour or a banana (whipped smooth) for the egg can make this recipe vegan.
