Introduction

Vegetarian omelette that goes well with a piece of fresh baguette. Vegetarian omelette that goes well with a piece of fresh baguette.
Number of Servings: 2

Ingredients

    1 eggplant, unpeeled (approx 1-1 Eggplant, fresh
    3 ring (3" dia, 1/4" thick) Peppers, sweet, red, fresh
    3 cubic inch Feta Cheese
    3 tbsp Basil
    2 large Egg, fresh, whole, raw
    2 1tsp Olive Oil

Tips

You could add a little bit of milk or water to the egg mixture.


Directions

1. Cube eggplant in 1.5 sq cm and sear them on the hot pan before adding the oil (although non-stick would be better)
2. Once toasty, add the pepper (also cut up into strips or cubes)
3. Once a little browned, add beaten eggs, salt, pepper
4. Cover until cooked throughout
5. Add fresh chopped basil and serve

Serving Size: using an 8" diameter pan makes two large servings
