    8 eggs, 1 cup white sugar, 2 3/4 cups of unsweetened applesauce, 1/4 cup oil, I large can pureed pumpkin (3 cups), 2Tbsp. cinnamon, 4 tsp. baking powder, 4 tsp. baking soda, 2 tsp. salt, 2 cups chocolate chips, 1/4 cup brown sugar.


Lightly beat eggs, add sugar, applesauce, oil and pumpkin and mix well. Stir in dry ingredients and chocolate chips. Put in greased muffin cups and sprinkle with brown sugar. Bake in 375 degree oven for 20 minutes.
