A delicious and easy low fat dinner the whole family will like. A delicious and easy low fat dinner the whole family will like.
Number of Servings: 4


    4 Chicken Breast, skinless & boneless
    1 (14oz)Can Black Beans, drained
    1 (14oz) Can Corn, drained
    2 Cups Salsa (any kind works great)
    1/2 Cup shredded cheddar cheese (optional)


Mix the beans and corn and 1 cup of the salsa and put in the bottom of your slow-cooker. Salt & Pepper the chicken and place on top of bean & corn mixture. Pour remaining cup of salsa on top of chicken. Slow cook on high for 4 hours or on low for 6 hours or until chicken is done and no longer pink in the middle (all slow-cookers vary). Sprinkle cheese over the top and let cook for another 15 minutes. Serve over rice if desired (I did not calculate the rice into the recipe)
