Introduction

Ingredients

12 oz Shrimp, cooked
2 tbsp Olive Oil
1 tbsp Butter, unsalted
1 small Onions, raw
2 clove Garlic
425 grams Red Ripe Tomatoes
0.5 cup, fluid (yields 2 cups whip Heavy Whipping Cream
1 oz Parmesan Cheese, grated
2 cup Spinach, fresh
Directions
1. Season shrimp with cajun seasoning (or any other seasoning you prefer)
2. In a large skillet, heat 1 tbsp of the olive oil over medium high heat. Add the shrimp and cook on both sides until pink, shouldn't take more than a couple of min.
3. Remove shrimp from the skillet and set aside.
4. Add the remaining olive oil and butter to the skillet. Add the chopped onion and garlic and cook until onion becomes translucent (about 3 min).
5. Add the tomatoes (puree them in the blender first) to the skillet and boil, then turn down the heat and simmer for about 15 min.
6. Add spinach and cook until it wilts.
7. Add heavy cream and parmesan cheese and cook for another 5 minutes. Taste and season with salt and pepper as needed.
8. Add cooked pasta, or brown rice, or any carbs of your choice to the skillet and enjoy!
