A yummy way to begin the day. Great for breakfast or brunch. Fairly low-carb too! A yummy way to begin the day. Great for breakfast or brunch. Fairly low-carb too!
Number of Servings: 6


    6 rashers middle bacon
    3 eggs, fresh
    1/2 cup grated/shredded cheese
    1 tsp garlic or onion powder or stock powder(optional)
    salt and pepper (according to taste)
    1/2 tbsp fresh (or dry) parsley
    1/2 cup Calcitrim (or Trim) milk
    1 baked (already cooked) medium potato, chopped into small pieces (optional)
    6 thin slices tomatoes


1) Using a 6 hole muffin tray, layer a slice of bacon in each hole. The bacon should cover the base of the hole.

2) In the meantime, mix together the egg, the milk, the cheese, potato pieces, parsley, garlic or onion powder, the salt & pepper. Mix until nice and blended.

3) Pour the egg mixture into each bacon case. Top with a thin slice of tomato on each.

4) Bake in a pre-heated oven for around 20 or so minutes - until egg mixture & the bacon is cooked.

5) Now eat and enjoy!
