    1 Serving imitation crab meat
    1/4 cup egg substitute
    1/4 cup mushrooms
    1/4 cup cherry tomatoes
    1 slice fat free American cheese
    1 tsp olive oil


Place oil in a skillet on medium heat. Saute' mushrooms. Add imitation crab meat. Add egg and season as desired (I use salt, pepper, onion and garlic powder). While egg is cooking slice cherry tomatoes over top. Scramble egg mixture until cooked though. Add slice of cheese on top and melt.
