Ingredients

    8 sweet potatoes
    1/2 cup orange juice
    1/2 teaspoon cinnamon
    1 teaspoon nutmeg
    4-6 bosc pears
    2 tablespoons butter
    1/4 cup light brown sugar
    1 teaspoon grated ginger
    1/4 teaspoon dried sage
    fresh sage leaves (optional)

Directions

Pre-heat oven to 450 degrees. Line a cookie sheet with aluminum foil.

Prick each potato a few times with a fork. Bake on lined cookie sheet until soft (about 45 minutes). When they are cool enough to handle, peel off the skin. Reduce heat to 375 degrees.

Mash potatoes with orange juice, cinnamon and nutmeg. Transfer to a large baking dish.

Peel, core, and cut pears into eighths.

Melt butter in a large skillet over fairly high heat. Add sugar, ginger, sage, and pear wedges. Soften the pears, flipping occasionally until both sides are golden brown.

Arrange the pears and a few sage leaves (optional) on top of the sweet potatoes in a baking dish. Bake on 375 degrees until thoroughly heated (about 20-30 minutes).

Serves 10-12.
