Ingredients

    3 links of Italian Turkey Sausage, pre-cooked and cut into half moon slices
    1 cup Zucchini, diced
    1 cup Yellow Squash, diced
    1 cup Onion, diced
    1 Med. Green Bell Pepper, diced
    1 cup Mushrooms, diced
    1 can Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano
    1 jar Ragu Traditional Spaghetti Sauce
    2 cups Ricotta Cheese, whole milk
    3 tbsp Grapeseed Oil
    1 tbsp Oregano, ground
    2 tbsp Basil
    1 tsp Salt
    16 oz Penne Pasta

Tips

Sprinkle servings with parmesan cheese. Can substitute hot Italian sausage if you prefer.


Directions

Cook pasta according to package directions. Reserve 1/2 cup pasta water. Drain pasta and set aside.

In large frying pan, sautÚ zucchini, yellow squash, onion, green pepper, mushrooms in 2 tablespoons of grape seed oil until tender. Add sausage, canned diced tomatoes, reserved pasta water and mix together. Add cooked penne and gently stir until all of the pasta is coated.

Grease a 9x 13 casserole dish with remaining 1 tbsp. of grape seed oil.

Add pasta mixture to prepared dish. Dollop ricotta cheese and slightly mix into pasta, leaving dollop mostly intact. Pour spaghetti sauce evenly over entire mixture. Cover with foil and bake in 350 oven for (approximately) 1 hour or until bubbly.
