Ingredients

    1 cup Whole Wheat Flour
    1/8 tsp Baking Soda
    1 TB Baking Powder
    2 TB Brown sugar
    1 tsp cinnamon
    1/2 tsp Apple pie or Pumpkin pie spice mix

    Generous 1/2 cup Dried Cranberries
    8 pitted dates, roughly chopped
    1/2 cup boiled water

    3/4 cup Milk, nonfat
    1/4 cup Agave Nectar
    1/4 cup Olive or other vegetable oil
    1 tbsp Molasses, blackstrap or regular
    1 large or jumbo egg
    3/4 cup wheat bran
    1/3 cup high fiber flake cereal (I use Nature's Path Flax Seed Plus cereal - maple pecan flavor)

Tips

Any dried fruit can be used. To make it sweeter, increase brown sugar to 1/4 cup.


Directions

Preheat oven to 375 degrees. Grease 8x8 pan.

Pour 1/2 cup boiling water over dried cranberries and dates. Set aside.

Whisk milk, egg, agave, molasses, and olive oil in large bowl. Add water and dried fruit, bran, and cereal. Set aside.

In separate bowl, mix flour, baking powder, baking soda, brown sugar, and spices.

Dump dry mixture into wet mixture and gently mix with spatula. Do not overbeat or cake will be tough.

Gently put batter into greased pan. Bake 20-25 minutes until well browned and edges are starting to pull away from the sides.

Important: Cool completely before cutting into 12 squares. This ensures the cake will be fully cooked. Freeze fresh.
