    4ocups chopped onions
    3 cups sliced celery
    12 oz sliced mushrooms
    2 bay leaves
    1 Tbls grated fresh ginger
    2 Tbls peanut butter or Tahini
    2 cans diced tomatoes
    1 cake extra firm tofu, chopped into bite size pieces
    soy sauce


On high heat cook the onions in a soup pot with 1/2 cup of water covered, stirring frequently for 5 min. Add celery and continue to cook covered for 5 min, stirring frequently adding more water if vegetable start to stick. Add mushrooms, lower heat and cook until mushrooms start to release their juices. Stir in bay leaves, ginger, and tomatoes and cook for 5 minutes. Stir in peanut butter, add tofu and simmer on the lowest heat for a few min. Add soy sauce to taste, discard bay leaves and serve.
