Introduction

Refreshing salad which reminds you of a trip to the tropics. Refreshing salad which reminds you of a trip to the tropics.
Number of Servings: 6

Ingredients

    2 tbsp olive oil
    1 tbsp lime juice
    1 tbsp fresh orange juice
    1 tbsp maple syrup
    salt and fresh ground black pepper to taste
    1 medium mango (peeled and cubed)
    1 medium grapefruit (cut into small pieces)
    1/3 cup pecan pieces
    6 cups of fresh baby spinach
    Parsley to garnish
    Fresh lemon and lime slices to garnish

Directions

Makes 6 large servings

Combine the first 5 salad ingredients in a bowl. Toss in the remaining ingredients. Divide the salad into small salad bowls, garnish with pasley, fresh lime slices and fresh lemon slices.
