Ingredients

    8 cup Milk, SO Delicious® Coconut Milk, unsweetened
    2/3 cup Canned Goods: Thai Kitchen Organic Coconut Milk (or all of 5.46 oz can)
    10 medium whole Red Ripe Tomatoes
    6 Chicken Thigh, bone and skin removed
    1 bunch Fresh Parsley
    1 bunch fresh Basil
    1 Bay Leaf
    1 dash Salt
    1 serving Lemon, fresh squeezed
    1 tbsp Agave
    1 slices (1" dia.) Ginger Root Throw in whole

Tips

Can Add Thai Curry paste for a change in flavor.


Directions

Throw everything in the crock pot and simmer over night. In the morning blend up 3/4 of all the tomatoes till pureed smoothly. Throw back in pot and break of the chicken into shreds. Can serve with rice noodles or brown rice. Add additional chicken breast to your plate for extra protein.
