Introduction

Number of Servings: 4

Ingredients

    1 pkg extra lean ground beef
    1 cooking onion, chopped
    4 or 5 mushrooms, chopped
    1 green pepper, chopped
    1 large can of tomatoes, chopped
    1 pkg of taco seasoning
    1 cup skim milk
    4 oz of whole wheat pasta (something short and fat)

Directions

1) In a deep skillet, brown ground beef and add onions, mushrooms and pepper until onions are translucent.
2) add taco seasoning and stir until it is well distributed
3) add the canned tomatoes, milk and 1 cup of water and stir until it starts to boil a little.
4) add pasta, cover and reduce heat to a simmer.
5) allow it to cook until the pasta is soft. Stir occasionally. This will take about 20 min but this will vary based on the type of pasta used.

Substitutions: You can use vegetarian ground round instead of ground beef or you can easily use ground chicken or turkey.
