    -- For the chicken --
    4 each Chicken Breast, with skin
    2 cup Buttermilk (lowfat)
    5 clove Garlic - minced
    2 tablespoon Dijon Mustard
    1 tablespoon Soy Sauce

    -- For the salad --
    1 small head Lettuce
    2 cup Spinach
    3 medium Red Peppers (cut into rings)
    1/2 cup Scallions (chopped)
    1 can Yellow Sweet Corn (drained)

    -- For the dressing --
    1/4 cup Onion (finely chopped)
    1 tablespoon Dijon Mustard
    1 teaspoon Salt (to taste)
    1 teaspoon Pepper (to taste)
    3 tablespoon Balsamic Vinegar
    9 tablespoon Olive Oil


1. Combine buttermilk, garlic, mustard and soy sauce and mix well. Pour half into container just big enough to fit chicken and buttermilk mix. Add chicken. Pour the rest of buttermilk mix on top and ensure all sides of chicken are covered. Cover container and chill for at least 8 hours. The colder it is, the longer it will need to sit.

2. Remove chicken from buttermilk mix and pat dry. Place on greased baking sheet. Place in a preheated oven at 400F until cooked through (about 30 minutes).

3. Combine all the ingredients for the salad and set aside.

4. To make the dressing, combine all the ingredients and mix well.

5. To serve: divide salad on to four plates evenly. Place cooked chicken portion on top. Serve with dressing on side to pour over salad and chicken.
