Ingredients

    Garlic, 1.5 cup (remove)
    Water, tap, 5 cup (8 fl oz) (remove)
    Leeks, 2 leek (remove)
    *Potato, raw, 4 medium (2-1/4" to 3-1/4" dia.) (remove)
    *Canola Oil, 2 tbsp (remove)
    Salt, 3 tsp (remove)
    Pepper, black, 1 dash (remove)
    Cider Vinegar, 1 tbsp (remove)
    Tabasco Sauce, 0.25 tsp (remove)

Directions

Place water and garlic in pot, bring to a simmer for 30 minutes, remove garlic cloves and reserve for another use.

peel and cut potatos into cubes, sautee sliced leeks, and potatos in bottom of pan with oil for 8 minutes.

add broth and seasonings. Simmer until potatos are tender.

Using a hand blender, puree soup until it is creamy but still a little chunky, or desired consistancy.
