Ingredients

1 cup Millet, dry uncooked
1.25 lbs Jennie-O Extra Lean Ground Turkey
2.5 cups Diced Bell Peppers
1 cup Diced Onions
1 cup Salsa
Directions
1. In a large bottom pot toast Millet on Medium heat till toasted, stirring constantly.
2. Slowly add 2 cups boiling water to Millet. Simmer for 20-25 minutes till water is absorbed.
3. While waiting for the Millet, brown the ground turkey in a skillet till throughly cooked.
4. Add diced onions, bell peppers and salsa. Simmer till Millet is finished cooking.
5. Add Millet the skillet and stir. The Millet will absorb most of the liquid in the skillet.
6. Divide into 5 and serve hot.
Makes 5, 1.75 cup servings.

Very Yummy! I enjoyed this very much. We wanted to try to accomodate our children's taste buds a bit and had on hand only salsa that would have been too hot for them, so we used an italian sauce (spaghetti sauce) instead and really enjoyed it. Plan to make it again! YUM! ...and filling & satisfying. - 2/18/10
