Number of Servings: 4


    1 lb chicken breast, boneless, skinless
    2 c leeks (chopped and cleaned)
    4 oz Whole Wheat Pasta (any pasta will do)
    1 can diced tomatoes
    1 tsp paprika
    1 tsp red pepper
    1/2 tsp black pepper
    1 c chicken stock
    3 cloves garlic (minced)


1. Clean chicken and remove all fat. Pat dry.
2. Rub chicken with 1 minced clove of garlic.
3. Mix dry spices and rub onto all all sides of chicken (use less if you prefer less spicy food).
4. Heat non-stick skillet to medium heat and spray with non-stick skillet spray (or use 1 tsp olive oil).
5. Cook chicken over medium heat until no longer pink.
6. While chicken is cooking clean leeks. Remove the top of the outter most leaves (dark green portions as they can be tough). Cut lengthwise 1/2 way through the leek and then cut into 1/4 coins. Rinse throughly (removing all dirt and sand) breaking apart into pieces. Pat dry.
7. Remove chicken and set aside.
8. Add remaining 2 tsp of minced garlic and leeks to pan and saute until tender (5-7 minutes).
9. Add chicken stock, tomatoes (one can) and chicken back to the pan. Bring to a boil.
10. Add pasta and cook until pasta is done to desired consistency (10-15 minutes). Stir frequently and add water or chicken stock if needed.
