Ingredients

    3 lb Tyson Boneles Pork Loin Roast
    12 strips Bacon, Corn King
    1 tbsp garlic, minced in a jar, Great Value
    1 tsp Ginger, ground
    1/2 tsp Crushed Red Pepper
    1/2 cup Great Value - Low Sodium Soy Sauce
    1 Tbsp coarse ground mustard
    2 tbsp Rice wine vinegar
    1 tbsp Honey
    2 tbsp Carrington Farms Organic Coconut Oil
    2 cup Great Value Instant Brown Rice
    1 medium Onion, diced
    2 cup Mushrooms, sliced
    1 tbsp Pepper, black
    1 cup Water, tap

Directions

Preheat oven to 350 degrees. Line a large baking dish with aluminum foil. Place the pork loin in the pan and score the top of the meat. Season with pepper.
In a mixing bowl combine garlic, ginger, crushed red pepper, soy sauce, mustard, vinegar and honey. Whisk together until combined. Pour over the pork loin evenly.
Take your bacon slices and drape over the pork loin and tuck ends underneath.
Bake for 1 hour. Remove from oven and cover with foil. Bake an additional 30 minutes or until internal temperature reaches 165 degrees.
To cook the veggies, In a large skillet heat coconut oil. Add sliced mushrooms and diced onions. cook about 5 minutes until veggies are tender. Add rice, water and 1 cup of pan drippings from the pork loin. Bring to a boil. Reduce heat and cover. Simmer for about 5 minutes until the liquid is absorbed and the rice is tender.
