A simple stir fry inspired by the yummy, sizzling fajitas you get at Mexican restaurants. A great source of healthy fats and lean protein, with lots of fiber! Ingredients

    1 tbsp light tasting olive oil
    2 1/2 cups zucchini, sliced & quartered
    1 small or medium onion, sliced, quartered, and separated
    1 1/2 cups green bell pepper strips
    8 oz boneless, skinless chicken breast, cut into strips or bite sized pieces
    3 tsp fajita seasoning mix

Directions

Heat olive oil in a large skillet over medium-high heat. Add chicken and veggies, then sprinkle seasoning on top. Saute, stirring frequently, until chicken is no longer pink and onions are translucent.

Serve over brown rice or spanish rice (not included in nutrition calculations).
