    6 oz thin rice noodles
    1/4 cup pitted kalamata olives (packed in vinegar, not oil)
    2 roma tomatoes
    1/2 cup grilled red peppers (packed in vinegar, not oil)
    2 green onions
    1 tbsp extra virgin olive oil
    ~1 tbsp (to taste) rice wine vinegar
    Salt and pepper to taste


Chop all veggies and place in a bowl. Boil noodles and add to bowl. Pour olive oil and vinegar over noodles; toss to combine. Season with salt and pepper.
