Introduction

Modified the Pork Milanese recipe from Women's Health - June 2008. When I made this recipe, I made my own breadcrumbs out of toasted whole wheat bread that I put in the food processor. Served with the arugula and tomato salad mixed with olive oil and lemon juice. I cut my chicken breasts into 4 oz sizes to make sure that I have 4 4oz servings. Ingredients

    Chicken Breast, no skin, 16 ounces
    Bread crumbs, dry, grated, plain, .75 cup
    Parmesan Cheese, grated, 2 tbsp
    Garlic powder, .25 tsp
    egg white, fresh, 2 large
    Egg, fresh, 1 large
    *Extra Virgin Olive Oil, .5 tbsp

Directions

Preheat ove to 350. Place each chicken breast in between plastic wrap and pound with a meat mallet until about 1/4 inch thick. Season each side with salt and pepper.

Mix bread crumbs, parmesan cheese and garlic powder in a shallow dish. In another bowl, mix egg whites and egg. Dip each chicken breast into the egg mixture first, and then into the dry mixture. Place on a baking sheet or a plate.

Heat the olive oil in a skillet over medium heat. Brown the chicken breasts in the skillet for 2 - 3 minutes per side. Place on baking sheet and bake for 7 minutes.
