Introduction

Edemame quinoa feta corn and red pepper salad, spiced up with salt, pepper, garlic and a good sized bunch of cilantro. Optional to include lemon juice. This recipe is without it. Ingredients

    680 gram(s) Edemame - Sunny Select
    290 grams Yellow Sweet Corn, Canned
    176 gram(s) Quinoa - Tru Roots (1/4 cup dry)
    112 gram(s) Feta cheese - Athenos garlic and herb crumbled
    100 grams Onions, raw
    245 gram(s) bell pepper, red, sweet, raw
    32 tbsp Cilantro, raw
    1 clove Garlic
    1 dash Salt
    1 dash Pepper, black
    8 tbsp Olive garden (lite) Italian dressing (by J-RERE)

Directions

Cook quinoa and let cool. Cook "steamer bags" of Edemame for 3 minutes and let cool. Cut up onion, cilantro and red bell pepper. Add canned corn (drained) and feta cheese crumbled. Season with salt, pepper, garlic, and top with Olive Garden Lite Italian Dressing. Mix all ingredients well, chill and serve. Each serving should be approximately 250-260 grams in weight.

Serving Size: Makes 8 servings of approximately 250-260 grams each
