Introduction

I needed a snack that was filling, low glycemic index, and easy to keep at work to avoid the inevitable box of non-diabetic friendly treats that show up. This one does it . Tasty, easy and quick to make and just over 4 rams of carb yield per muffin. Ingredients

    3 large Eggs
    4 oz Coconut water Vita Coco
    1 tsp Vanilla Extract
    1 cup Almond Flour
    1/4 cup Coconut Flour
    1/4 cup Cocoa powder
    2 tbsp Flax Seed Meal (ground flax)
    1/4 Splenda (or non-nutritive sweetner of your coice
    2 tsp Instant espresso powder
    2 tsp Baking Powder
    1/4 cup Coconut Oil - melted

Directions

1. Preheat oven to 235F. line 9 muffin tin sections with parthment or foil muffin cups.

2. Combine eggs, coconut water and vanilla extract in medium-sized mixing bowl. whisk to combine with manual whisk or hand mixer.

3. Add dry ingredients and mix well

4. Add melted coconut oil, mix well.

5. divide batter evenly between th e9 cups. Bake 2325 minutes. Cool in muffin pan.
