Ingredients

1 cup Margarine, soft
1-1/4 cup Granulated Sugar
3/4 cup Egg substitute, liquid (Egg Beaters)
1 tsp Vanilla Extract
1 cup cold Water, tap
1 Red Ripe Tomatoes
2-1/2 cups Flour, white
1/2 cup Cocoa, dry powder, unsweetened
1/2 tsp Salt
Directions
Preheat oven to 350F. Grease and flour a 9x13 inch cake pan. Split the eggbeaters, placing the 1/3 in a small dish and the other 2/3 in a large, grease-free bowl.
In a large mixing bowl, cream together butter and sugar until fluffy. Beat in the 1/3 eggbeaters and vanilla, followed by the water and pureed tomato. Sift together the cake flour, cocoa, baking soda and salt into the mixing bowl and mix well.
Beat the 2.3 eggbeaters until they hold are fluffy. Fold them into the batter lightly - it won't matter if a few lumps of yellow still show. Pour into prepared pan and bake for 40 to 45 minutes, until firm when pressed in the center. Let cool and ice using the Busy Day Cocoa Icing or dust with Powdered sugar.
*To peel a tomato, dip in boiling water for several seconds, then into cold water, (this loosens skin and makes it simple to remove). Cut tomato in half crosswise and squeeze out seeds.
