A rich tasting meatless version which everyone will enjoy. A rich tasting meatless version which everyone will enjoy.
Number of Servings: 8


    4 medium sweet potatoes (peeled, cooked and cubed)
    2 tablespoons extra virgin olive oil
    4 oz almond milk ( 4 tablespoons)
    4 tsp cornstarch (to thicken mixture)
    1 cup tomato sauce
    1 packages of frozen mixed vegetables
    4 cloves of garlic (minced)
    2 teaspoons of fresh thyme (chopped)


Makes 8 large servings

Boil the sweet potatoes until very tender. Drain well, thoughoughly mash, and then add the olive oild, the almond milk, a dash of salt, a dash of pepper.

Preheat the oven to 350 degrees F.

Combine the remaining ingredients in a bowl and then spoon into 8 baking bowls each with 1 to 1 1/2 cup capacity. Can be cooked in one pan if you wish.

Top the lentil mixture with the sweet potatoes.

Bake 35 - 40 minutes or until golden and bubbly.

Serve and enjoy with friends and with your children. They won't miss the meat!

  • I think the lentil mixture piece of the recipe is missing. I think it sounds yummy but need more info i think. - 6/21/08
