Introduction

Ingredients

    *La Tortilla Factory - Low Carb Tortilla, 1
    Spinach, raw 1/2 cup
    Mushrooms, 1/2 cup, pieces or slices
    Scallions, raw, 2 tbsp chopped
    Kraft Free American Cheese Singles, 2 slice
    Parmesan Cheese, shredded, 2 tbsp
    Chicken Breast, no skin, 3 ounces
    1 plum tomato
    garlic powder and pepper to taste
    olive oil spray

Directions

Saute chicken, mushrooms with garlic in sprayed fry pan. Place tortilla on cookie sheet spread spinich sprinkle with scallions, spread chicken mixture over, sprinkle with cheeses and pepper. Don't need salt as cheeses are pretty salty. Bake in 350 oven for 10 to 15 min or until cheeses are melty and it looks done to your tastes. slice tomato and layer atop, unless you prefer them cooked with pizza. I may try this with a low cal white sauce some time.
